Anyone who has tried out recipes and tutorials from Pinterest has probably had some failed attempts or lackluster results. I've been looking to Pinterest for food ideas for the last few years with mixed reviews but somehow I managed to use it to my advantage when meal planning recently and hit a home run with all three of the recipes I chose one week. Here are the recipes that worked for us. All three of them are relatively easy and at least marginally healthy.
Chicken Gyros and Tzatziki Sauce | This was unexpectedly my favorite of the three. I have pinned and looked up many tzatziki recipes in the past but was always daunted thinking they would be too labor intensive, but this really was not at all. I cooked the chicken for the gyros on the stove and it was very tasty but I think it would be even better cooked on the grill.
Green Chile Chicken Enchilada Stuffed Spaghetti Squash | I have never made spaghetti squash before but love it. Like the tzatziki sauce, I have always been a little nervous to make any spaghetti squash recipes after all the stories about how hard it is to cut the squash. I took the plunge on this one and ended up having barely any troubles cutting the squash in half! Wyatt was a little skeptical of this recipe because of the squash. He knows how much I love squash though and tried it for me. Overall this was a fairly easy dish that had a great flavor. If I make it again, which I do plan to do, I might add just a little more corn and enchilada sauce to give it just a little more flavor.
Orange Ground Chicken Rice Bowls | Another easy dish was this orange chicken recipe. We enjoy Asian recipes so we already had most of the ingredients for this and just had to pick up the fresh ingredients and meat. This one will definitely be repeating in our house.
